From Garden to Table

Let us take you on a culinary journey through the rich pantry of Bjäre, the garden, and the surrounding nature. Our “garden to table” philosophy is rooted in conscious choices and ingredients sourced from local farmers and producers. Watercress, wild garlic, Spanish chervil, and other herbs are gathered from Norrviken’s forests and kitchen garden, honey comes from our friends at the apiary, and fruit is harvested from Norrviken’s own orchards.

A food experience shaped by local and homegrown flavours, set in our beautiful orangery where the boundary between indoors and outdoors gently fades.

A taste of Bjäre

At Orangeriet, we create thoughtfully prepared dishes using ingredients from Bjäre’s rich pantry, where quality and sustainability go hand in hand. Our culinary philosophy is rooted in locally sourced produce and the rhythm of the seasons, with the ambition that every plate includes something grown in Norrviken’s own gardens – from garden to table.

By working as closely as possible with local producers, we reduce unnecessary transport and support the surrounding agricultural community. Our menu is shaped by availability, often placing vegetables at the centre, complemented by carefully selected proteins. We aim to highlight more vegetarian options, without ever compromising on flavour or creativity.

Sustainability runs through everything we do – from waste sorting and recycling to our composting system, which transforms food waste into nutrient-rich soil. A circular approach where what is served on the plate one day can help nurture new harvests in our kitchen garden the next.

“We love food, we treat our ingredients with care, we appreciate clear, distinct flavours, and we don’t complicate things unnecessarily – even though we enjoy experimenting, especially with unexpected combinations. We often step out into the gardens or the kitchen garden to pick flowers and leaves to enhance our dishes.”

- Calle Örtendal, Head Chef
